Chocolate Chip Banana Cake

Time for something a bit more healthy! In this recipe, you can choose to either forgo the chocolate chips or make it into muffins - whatever you feel like!

Ingredients:
• 1 1/2 cups flour
• 1 tsp baking soda
• Pinch of salt
• 3/4 cup sugar
• 3 ripe bananas
• 1/2 cup oil
• 2 eggs
• 2-3 tbsp espresso (optional)
• 1 tsp vanilla extract
• 1 cup choco chips

Method:

  1. Mash the bananas and make a paste. Make sure to break all the lumps to avoid problems later on.
  2. Beat the eggs lightly and add to the banana paste. Add the sugar as well and combine. Over here, you can also use half white and half brown sugar i.e 6 tbsp each.
  3. Mix in oil, espresso (if using) and vanilla extract.
  4. Add the flour, baking soda and salt to the wet ingredients. Mix until everything is fully incorporated into the batter.
  5. Fold in half of the choco chips. Pour the batter into a mould and sprinkle the rest of the choco chips on top (for aesthetic purposes!).
  6. Bake at 180°C for 20-25 mins or until toothpick inserted in the center comes out clean.

Notes:
‣ For the choco chips, I have used two types in my recipe - compound and couverture. The compound choco chips will hold their shape while baking whereas the couverture melts a little giving the cake a richer, chocolatey taste. Avoid adding too much couverture choco chips - use about 70% compound and 30% couverture. In my opinion (and around half the world!), bananas go with chocolate every time!
